Creme Al-Tayeh

I delve in a well of memories, back to a time when a die-hard and venerable gentleman never stepped outside his home without a tarboosh on his head. The clear image of one distinguished octogenarian coalesces in my mind. He originally came from Lattakia and settled in El-Khrab, beyond the southern "Bab-el-Hara" of old Tartous. I've never seen him except in a three-piece suit (mostly white) and a polished smile on his face. He opened shop in the 1940's in the narrow Souk and became a fixed feature among the array of butcher shops, Msabbha and Fool joints, rope sellers, tailors, vegetable merchants, pickle peddlers, hardware stores and  blacksmiths. His shop was unique though, a refined bookstore in an agrestic neighborhood. His name was Mustafa Al-Tayeh (1897-1984)  مصطفى الطايع and he didn't only sell books but was also an Attar, the only perfume maker in Tartous.


Mr. Al-Tayeh was fascinated with roses and dedicated his life to extracting their essence and capturing their fragrance. In 1950 he created what eventually immortalized him, a certain balm made from garnered rose butter and aptly called it Creme Al-Tayeh كريم الطايع. Within a few years, it became a genuine Tartoussi household name. Its inventor held that his secret formula possessed extraordinary medicinal properties and that it was a cure for virtually any dermatological ailment. Sixty years later, we still don't dispute his claim in Tartous, Creme Al-Tayeh is a magical balm and anyone lucky enough to have tried it would attest to that.

As a teenager, my first line of defense against pimples was a dab of the buttery balm. That's all it took, a dab or two, once or twice and my skin was clear again. From lip sores to hemorrhoids, burns, bruises, lacerations, eczema, black spots, hair loss, hair growth, bumps, ulcers, irritation and skin rash, Creme Al-Tayeh cured them all. It came in two forms, pink and white, prepared from either red or white rose petals. It was only a matter of preference to choose one color or another but most often everyone ended up buying both. Now as far as I'm concerned the most bewildering quality of the small jar was that it never seemed to run out of balm. During the extensive research in preparing this post (you can tell, can't you?) I asked a random sample of family and friends if they ever bought a jar and used it completely. They all confirmed my initial doubt, it's more likely to have it misplaced, to move out of the house and lose it during the packing and unpacking or to immigrate to another country than to actually consume it all.

Then as luck would have it I ran into a retired ambulance driver who transported patients to larger hospitals in Damascus. I remembered a previous conversation we've had in which he told me that he always ferried cartons full of Creme Al-Tayeh to one store in the Kassaa area of Damascus in his ambulance. There was a huge demand on the Creme and he ran a lucrative business on the side. Then he conspiratorially confided that among the Kassaa store very special clients and regular users of Creme Al-Tayeh were the Lebanese Younis Sisters, Heyam and Nezha. Now I really wonder how many readers actually know who Heyam and Nezha Younis are. Is there a statistically significant correlation between those readers who've heard of both Creme Al-Tayeh and of the Younis Sisters? I suppose this fascinating possibility deserves further investigation. Yet I can't let you (Ignorant Readers) get away with your callowness. To recognize Haifa Wehbe as a Lebanese superstar and not embrace Heyam's beautiful voice (and eyes) is sacrilegious. And what about you, Arabic movies' buffs who've never heard, or daydreamed of Nezha Younis? You should all be ashamed of yourselves.

The eldest of Mustafa Al-Tayeh's four daughters inherited the formula and continued in the footsteps of her father. She too had passed away but was able to transfer the secret to her sisters. They still prepare the balm, fill the jars and sell them at home in Tartous. Creme Al-Tayeh is also available in a few selected stores in the city and outside. I have 2 jars in my bathroom and I use them mostly for shaving cuts since, alas, I'm way past getting pimples on my face. If you tried it all but still can't get that perfect Tartoussi skin now you know our little secret. Nature and savvy conspired into making us the beautiful people we really are. Well these and a kindly gentleman from Lattakia...
who once upon a time made the clever choice and moved to the right place.

Al-Mina Street


I often write about a Tartous that is no more, about a time that treads on the fringe of anamnesis. I might be a nostalgic old dude but I am neither bitter nor grumpy. I simply miss a past that is far too beautiful to be laid to rest then forgotten.

Until the 1980's Al-Mina street was the crown jewel of my city. I was born right there, where I planted the red arrow on this photo dating back to the early 1960's. It was taken from the roof of the Awkaf building looking north. I remember every single building in that photo, a few of which still stand after almost five decades.

The Roman port, which was later obliterated, is visible right across the street from my home by the sea. So is the open field we called Al-Bayader with a tin roof cafe that was the compelling gathering place for all the Tartoussi men in the evening. During the day it served as playground for us kids. We played ball, rode our bicycles and made up games of unimaginable simplicity. Women with their children strolled down the long street as ice cream vendors carried their big thermoses on their backs and roasted corncob outcriers pushed their colorful carts with blazing fires.

There was a short-haired pointer dog in almost every house down the street. Men and boys hunted year round. Game birds were abundant and lunch invariably included quails, thrush, shukkar partridges or doves. Anyone who did not own a felucca had a fishing rod. A small piece of dough was all the bait needed to catch the most magnificent specimens of Buri fish. Sure they sold lamb at the butcher shop but red meat was something reserved for special occasions and shunned at in our everyday Mediterranean diet.

Less than a handful of cars cruised the sleepy town. The mayor had an automobile of course and so did the doctor. There were three or four taxis people shared to go to Tripoli on a jaunt or to travel to Damascus for an overwhelming need. However, the streets of Tartous were teaming with Vespas, Lambrettas and bicycles. Oh, and we had quite a few tumbors (wooden carts pulled by donkeys or mules) which adequately fulfilled the roles of delivery trucks and utility vehicles. As a kid I never found a compelling reason to venture beyond Al-Mina. Inland Tartoussis, those who did not live on the front row facing the sea, came to us instead. Everybody knew everybody else. Everyone had a nickname and it was used to call him by. The houses of the rich had more rooms than those of the less fortunate but there were no significant visual clues setting people apart. A wealthy person who took himself seriously stood to lose most. Nobody liked him and all the money in the world could not buy him an ounce of respect.

During summer break and unless a kid was sick he rarely stayed at home. Our parents had no reason to worry about us. We were always to be found somewhere by the sea. Most of us learned how to swim before we could take our first steps. We were obviously as safe outdoors as we were inside our own homes but it was much more fun. The visible thin line in the background of the picture is the foundation for the northern breakwater of what later became the Port of Tartous. We went there, searched for and found Batlouness (mussels) on the submerged rocks. We would spread them on a piece of discarded tin, collect splinters of wood from ill-fated boats and cook them on the spot. They provided more lunch than any raucous kid needed to keep him going for the rest of the long day and they were tastier than the fanciest restaurant in the world could ever dream of presenting.

I grew up there, on that stretch of road. I wore high rubber boots in the winter and an orange parka over my  uniform. A ten-minute walk due east put me in school but I never followed a straight course. From a distance, I shadowed the girl next door to her school, just in case some backland lad was fool enough to cross her path. I also gazed at her cute little butt in the tight Foutouweh Khaki pants every single step along the way. I had my first kiss on the roof of one of these buildings. Her cheeks turned red when we kissed and her lips tasted of strawberries. We both trembled as I gathered my courage and cupped her breast. It was smaller and firmer than a crunchy apple and infinitely more scrumptious.

In a trance, I stare at the frozen moment captured in this old photograph. Phantasms from my past flicker on a screen in my mind. The laughter of the dead echos against the walls, memories of those who sailed West shimmer on the facades and the twinkle in the eyes of my remaining companions reassures me that it was all real, that I am neither bitter nor grumpy. We had all known better times... on Al-Mina Street.

Quadrennial Anniversary - a disgruntled tartoussi

A few readers have expressed their discontent over my predisposed beautification of Syria and the untainted image I strive to paint in my writing. On the occasion of this blog's fourth anniversary I admit that they are partially right. Although I am not in a perpetual state of bliss and satisfaction I tend to not elaborate on my dislikes. I am simply stingy when it comes to the expenditure of mental energy on my aversions. I would rather talk, write and cerebrate about life's pleasures rather than its unavoidable maladies.


That we cannot freely and entirely express ourselves here is a well-known fact of life. However, when mushrooming zealots seek to stifle freedom of expression and rowdily promote a fake carbon copy of a traditional and devoutly pious Syria, one which had never existed, it is high time I lash back. On the popular level, their extraneous brand of petro-Islam was sanctioned by an innate feeling of resentment and bitterness toward the dark years of the Bush administration and the whorish demeanor of Israel. Our religiously driven addicts took advantage of the prevailing frustration and sense of helplessness and earnestly pursued their social and political assumptions and ambitions, which incidentally nestle perfectly within the neo-cons' and the Zionist overall master plan for this region and the rest of the world. The writings were all over the wall and if left unchecked they would stop at nothing short of transforming Syria into a mutated Saudi mongrel.

There are over twenty-two millions of us Syrians as per latest available statistics, thanks to a government that continuously looks the other way, if not encourages us to breed like rabbits, and to an ecclesiastical gang-raping of native Levantine culture. In 1977, when I took my Bakaloria exam, the population of Syria was around eight millions. We have increased by a whopping 275% in 32 years, we have reduced green and forested areas to a third and we have decimated the chances of younger generations to find and pursue a better future. Being alienated from a West that treats them with suspicion and lured by a well-funded canonical machine our youth have but a limited number of options to choose from. Slowly but surely a bony temperament, buried in an alien and dusty past, beckons as a viable lifestyle.

My daughter is in 9th grade. This is a very significant point in the lives of fifteen-year-old Syrian students as they have to take a national exam (Brevet) which affects their academic fate. Excellence is measured by how much they remember word by word of the archaic curriculum. They are discouraged from making decisions or voicing opinions. Our educational system emphasizes total subservience and uniformity and represses creativity and divergence. Among the various subjects they have to memorize by rote, two in particular stand out for not only negating one another thus making them a total waste of time, but for being absolutely absurd as instruments to measure scholastic attainment. Teenagers, the age of budding roses, carry the dual burden of "learning" National Socialist Education and Religious Education (Muslim or Christian). "Scientific thought defeats ignorance and outdated traditions, frees us from all forms of awkwardness: Economic, social and cultural and rids us of illogical and indisputable bigotry.” Quite a brilliant quote from the National Socialist Education book, isn't it? Then how about these gems taken from the introduction of the Islamic Education textbook about the purpose of the course: “The presentation of scientific material in a simple manner and detailed explanation in order for students to memorize it... Relying on scientific sources in order to prove the selected scientific material.” Our children are being taught the value of the scientific method by failed national socialists and science by a moronic clergy.

Nonsense and idiocy are riddling our daily existence and I have never been blind to them. Every once in a while when I feel overwhelmed by the obnoxiousness of the emerging literate crowd I strike back. This is the voice of a secular humanist from Tartous, a simple man walking the once enlightened and bustling street, turned silent and bereft in these times of parasitic noise and groveling babble. This blog is about my Syria, the way it was and the way I want it to be. I will continue to write about the good life and the delicious food of the Levant, the rich history and the swaying butts of our gorgeous women, the music, the mountains and the sea of a Syria that is far too modest to flaunt her beauty for the rest of the world to see. A princess once told me (Yes, there is a princess among my readers) that if it were not for me she would have never heard of Tartous. If that is all I have done in four years, I am satisfied that I have done enough. There still is plenty to come from this old tartoussi troubadour in the times ahead. Sabbar

I stood watching intently, and amused, as she attempted to peel the ripe Sabbar. The juices ran down her fingers to her delicate wrists and bits of the peel covered the place at the table where she stood. She was determined to do it herself. That was part of what I loved about her, her determination, which, at times, bordered on a hard-headed stubbornness. Although she had seen it in the streets of Damascus, she had never eaten the sweet fruit in her life. Here, it was everywhere, a delicacy we took for granted. However, as soon as her lovely hands held one for the first time, I saw the pear in an entirely new light.

We had been out walking. I was showing her the area around where I grew up. She marveled at the number of cacti, Sabbara trees, as she called them, that were along the road. They were handsomely laden with their brilliant red or yellow pears. When I told her they were edible, the Saber, as we call them here, she insisted that we pick some and I, enthusiastic to share everything with her, carefully pulled them from their prickly nests. I took off my shirt and created a sac of sorts in which to carry them home. She giggled nervously after I cursed several times from receiving a poke or two, but she continued to cheer me on as if I were navigating an obstacle course. My pride would never allow me to pick less than ten and, after I caught her admiring my bare torso with a mischievous little grin, I continued on as long as I could.

I rolled the fruits from my shirt onto the kitchen table. There were at least twenty. I stood for a moment and admired my harvest until I caught sight of her hand moving in to fetch one. "No, habibti!" She pulled her hand back in alarm. I immediately put my arm around her slender shoulders and warned her about the nasty thorns. They were small but insidious, and caused great discomfort if they got under the skin. Naturally I knew this from years of experience, from having them embedded in my hands and arms. But I couldn't knowingly expose her to anything unpleasant. The only thing I wanted her to remember about Sabbar was the luscious taste...and me picking them without my shirt. So I washed each of them and removed as many of the thorns as I could without actually peeling them.

She insisted on using a potato peeler and somehow I couldn't bring myself to stop her. "I don't want to cut out too much of the good fruit. I tend to gouge things with knives." She told me confidently and with a look in her eyes that suggested I'd better not try to stop her. She tentatively peeled away the outer skin and then used a knife to chop off each end of the fruit. It took everything in me not to chuckle or to move in to show her the proper way. She was adorable in her awkwardness, so I bit my tongue.

When she cut off the ends she discovered the spines. At first she wasn't sure what to make of them. She muttered to herself as she inspected it by removing one of them. As she did, the rest of the outer skin pulled away revealing the edible fruit. I saw the light go on; her beautiful eyes sparkled with delight. "Ah ha!" Then the scolding. "Why didn't you tell me?!" Instead of answering I gently removed the well peeled pear from her hand and took a bite. Her eyes turned stormy as she watched my mouth envelop almost half of it but before she could reprimand me I put the rest of it to her lips. She took a small bite and let the juices and pulp roll around in her mouth. Her eyes immediately quieted as the pleasure of the taste registered on her tongue. "Sahha."

I sat down and quickly peeled more of them. I selfishly needed her to eat at least one more. I cut the fruit into small pieces and asked her to sit by me. With my fingers I placed each piece on her tongue after she had chewed and swallowed the one before. I watched her enjoying the sweetness, her lips moving sensually as she chewed. I gazed longingly as she swallowed, following each lump as it moved through her throat and down her long, graceful neck. After she finished the last bite, I kissed her and savoured the sweetness of her mixed with the nectar of the Sabbar. It was the most heavenly combination. Suddenly I had the urge to harvest every tree in existence just so I could feed her one every day for the rest of our lives. But we had enough to last us a few days, and other, more burning, urges overtook us anyway...

I had wanted to show her everything about my life here. However, I quickly discovered that, in fact, through her, my life was reflected back to me in a refreshing new way. Just by being here, by being curious, by being her, she transformed the simple Sabbar into a delicious memory of that day, of her. I would never ever look at it or taste it in the same way again.

Sea Side - A First Novel


I've been on a journey of self discovery for the last nine months. It all started in July 2009 when one of my favorite bloggers and my dearest friend Mariyah posted a simple and beautiful entry. For those of you who are not familiar with Mariyah, she is an exceptionally gifted writer from Damascus, who over the course of twenty six episodes told the story of her parents in the form of an inspiring and heart warming fairy tale. I asked her then if this Sea Side, as she called it, was going to be another Ghassan & Alexandra. Instead of giving a straight answer she invited me to join her in co-writing a story with the backdrop of the Syrian Coast. How could I ever say no to a beautiful lady like Mariayh?

Privately, however, I felt a little awkward. I've never written anything longer than a few pages. I've never written fiction. I've never written with another person. Yet my deepest desire had always been to write a novel someday. My problem was not one of lack of self-confidence but rather of lack of time. It's not an unfounded excuse on my part. Some people may indeed function better under pressure but I was not wired like that. I write when I'm happy, or at least unconcerned about the outside world and the mundane necessities of every-day's life. Had I been self-sufficient enough not to work yet to bring up three children in the best possible circumstances I would've not minded an early retirement from “employment” to devote my time to reading and writing. Mariyah's invitation was in no way a challenge but the motivation I lacked to give it a shot and thus our journey began.

We alternated in writing subsequent chapters while we maintained a disciplined routine. We published a new episode every Friday and we did not consult directly or agree in advance on a plot. Our story weaved its own way through our words and the four main characters were developed in almost real time. The fact that neither one of us had control over the flow of events meant that a high degree of unconscious mental coordination and an unspoken synergy have to come into play. We continued to surprise each other while enjoying ourselves to the fullest. I had never partnered with anyone before on a creative process and now that it's finally over I want Mariyah to know what a joy, what an honor and a complete emotional and intellectual alleviation she had brought me.

Sea Side takes place in and around Tartous. It's a romantic love story at best, something I never expected or anticipated that I might write someday. But to say anything less than that I'm very proud of it would be an understatement. This is the ever elusive first step and I took it after Mariyah extended her hand and led the way. Now I know for sure how much I want to write and I will unearth every bit of time to do just that.

I have to thank you Mariyah for being my companion by the Sea Side. I already miss Yazan, Yasmina and Youssef but I'm going to miss Amar most. Your words made her unimaginably beautiful while mine only mirrored your charming writing and elegant style. If I ever publish one day the writing of Sea Side will remain my most cherished memory of all. It is after all my first novel.

If I may Mariyah, I am going to ask you to do me a little favor. I want you to write, at your own time, a short story and grace my blog with it. This is of course an open invitation, with the key for you to keep. Come by any time and write here without even letting me know beforehand. Not only once but a hundred thousands times and more. My blog is your blog now and always.

Mariyah and I have set out to have fun but we ended up with much more than we bargained for. Accordingly I have to also thank our friends who commented there on Sea Side and kept us company for 38 consecutive weeks. No matter what our humble effort into writing our first novel turned out to be we have both gained your friendship. How in the world can I be happier?

Keddabat

Tartoussi cuisine is inconspicuous, even in Syria that is. Anyone who's been here will tell you that we make out of this world fish but I think seafood is great in all coastal cities around the world. Ignorance about our local entrées though does not necessarily mean that we don't have some of the yummiest dishes in Syria. It's more a testimony of our quiet nature, the writer of this blog not included. We're not loud like the Damascene. We're not vocal like the Aleppine. We are neither funny nor too self-conscious like the Homsis or the Hamwis respectively. We're simple folks who love Mezza, barbequed chicken and Arak. And when we want to be gluttonous we feast on Burghul.

Well just to be sure no reader takes this post as an indication of false modesty, no one in Syria, and I repeat no one, even comes close to our Wara Enab (Stuffed Grape Leaves) but that is another story which had already been proven and laid to rest.

Today's dish is called Keddabat and unless some of you prove me wrong it is a very local Tartoussi/Arwadi recipe unknown beyond Al-Thawra Street in Tartous.




Ingredients:
  • Fine Burghul 2 cups (Cracked Wheat): sold in most Middle Eastern food stores
  • All purpose flour 2 cups
  • Olive oil ½ cup + 2 tablespoons to saute the onion
  • Swiss Chard a few chopped leaves (for stuffing the larger Keddabat)
  • Onion 1 diced
  • Garlic 4 cloves
  • Parsley 2 tablespoons finely chopped after thorough washing
  • Salt and black pepper to taste




Preparation:

  • Wash the burghul under running water then keep in strainer for 15 minutes.
  • In a blender crush the burghul until it becomes powdery.
  • Mix the burghul and the flour and roll in semi-wet hands into small balls (see picture).
  • For the larger Keddabat: Saute the diced onion in 2 tablespoons of olive oil until tender (don't let them turn golden in color). Chop the Swiss Chard after washing it thoroughly with water and add a dash of salt. Mix onions and Swiss Chard together and use it as stuffing for the larger Keddabat. It's not as difficult as it looks to make them and to stuff them. Just keep your hands a little wet and practice, practice, practice.
  • In a bowl bring 6 cups of water to boil. Add the Keddabat (small and large: on the average for every 10 small unstuffed ones you should have one large stuffed one). Keep over medium high heat for 10 minutes then remove Keddabat and drain and put aside.
  • Keep 4 cups of the boiled water (throw away the rest). Add ½ cup Debes Remman (Pomegranate Molasses), ½ cup olive oil, crushed garlic and some finely chopped parsley and stir well.
  • Return the Keddabat to the sauce.
  • Serve hot or cold. I eat it with a spoon like soup. Uuuummmm if you do it right you'll know what's the big deal about being a tartoussi :-)
And, ehem... the red sauce you see on top is Tabasco.

Let it Snow



I stood behind the kitchen window on this Friday morning. It was 7:00AM when the cloud above broke her water. Flurries of snow started falling and drifting in the light wind, very unusual for seaside Mediterranean Tartous. I went outside to the balcony to drink my espresso and enjoyed five magical minutes. The thermometer showed 8ºC. What a glorious day!

I woke Fares up, “Come on! There must be plenty of snow for us in Kadmous.”

“Oh, Baba! Are you sure?” Fares had only been in the snow once a few years ago in Farayyah, Lebanon. He was about five and he had a blast so his excitement was only natural.

At 10:00AM we left Tartous and headed north on the Lattakia Highway. 35 KM down the road we crossed Banias and made a right turn and quickly climbed our way up the mountains. I could tell that whatever snow we might find would be light at best. We crossed one enchanted village after the other, Bermaya, Faresh Ka'bieh, Isquableh as we steadily gained altitude. 57 KM from home we reached Kadmous at an elevation of 1000 m (0ºC). Fares could not believe his eyes, there was snow indeed and everywhere. We drove for five minutes due north and stopped by a snow covered hill and well... played in the snow.

Imagine Tartous



I woke up very early as is my habit and enjoyed my solitary morning hour. The onslaught of last night's storm rebounded in my mind and trudged along the bloated streets and through the flailing branches. As the winds howled and the rain pounded against the windows the frowning sky inflicted her wrath down upon the coast. Outside the breakwater, the sailors of a moored ship toiled feverishly in the blinding gale to let her loose and untie her ropes from the constricting buoys . When they finally set her free her master put her on a defiant course in the face of waves and fed her all the power the monstrous engines could muster. She rode the six-meter high swells leaving the treachery of solid land behind and headed deep into the sea where it is safest for her and her men.

I sipped my espresso and listened to stubborn gusts inviting me for a ride along the seashore. They had something to show me, they promised.

Five minutes around Tartous to the sound of 3 random songs and that of the sea. Just come ride with me.

Perched On My Rock

My mother told me that on the night I was born a storm of freakish magnitude hit Tartous putting the fear of god in the hearts of her people. The little town was ravaged by torrential rains and strong gales. The power went down and all hell broke loose. Psychotic lightening raped the sky with lunatic vehemence, quavered then climaxed in deafening rolls of thunder. Tormented shutters flapped on hinges in agony and moaned. The wind howled in between the alleys chasing genies deep into their holes. Rain drummed on tin roofs in a sadistic crescendo. Thunder bellowed threatening to disgorge the earth beneath. The sea pounded the beach a hundred meters from the room with a view to the sea, spitting its froth on the window. It roared above them all with deafening anger: “Be quiet!”, then I cried.



As a toddler I sat all day in my playpen on the balcony facing the sea. That was the only way to keep me content, my mother's bedtime story went on. Browsing old black and white photographs, I see myself swimming by the age of four. I have no recollection of my first steps nor of my earliest plunge. I do know, however, that the passage of years did not change me in the least. I still run away from it all and stare at the sea with an insatiable hunger and a profound thirst. Even in the dead of winter, when only a fool with a lantern roams the beach, I am there perched on my rock.



One thing about Tartous which made it different from all the landlocked cities I lived in is the expanse of her horizon. I remember an early trip to Damascus when my mother and father were traveling abroad and had to leave me at my grandparents'. I searched for the horizon but could not find it and I was afraid. How did they live within walls of mortar and shadows and not suffocate? Where did they escape to when their world closed in? There was no salt in the air to breathe. They did not sweat nor feel the caressing fingers of a westerly breeze cooling their bereaved souls. No sail carried their cravings to foreign lands. No ship horn wailed in the dark of night filling their minds with vocal scenes. Did they ever dream while they slept or did they barely live, fearless of getting lost at sea?



I have counted my days and ways by the ensuing tides, my spirit rising and falling with the imminent swell. I spread my wings and soared with the seagulls above. I let go, drifting, till I turned into a far-flung spec then disappeared. Time, being left without me, panicked. It gathered its hours and minutes and scurried beyond the mountains to the east, waiting for me to reappear.



I fell in a waterspout, morphing with the distant ripples. By dawn, they made it as breakers to shore. I climbed on my rock, naked and strong. I filled my lungs with mist and walked the desolation. The cowardly time, finding courage in my return and eager to please, asked me when I wanted to go.



I slumped in my bed, where I was born in my home by the sea. My nightly voyage left me invigorated and alive. I shut my eyes not to sleep but to see you closer. And I did.

When I Need You

In the summer of 1977 shortly after my National Bacalaureat exam I attended my first dancing party in Tartous. These were extremely rare events in my little town by the sea back then. Boys and girls went to single-sex schools like the rest of Syria with the exception of a handful of private ones in Damascus and Aleppo perhaps. Not many years later that had come to change and by the early 80's of the 20th century Tartous implemented co-ed in all of its public schools and remains today the only Governorate in the country without any single-sex learning institution. We've sure moved way ahead of the pack and we're proud of our mindset here on the coast. In fact, despite the relentless waves of marauding Wahabi Islamists pouring over our shores, we Tartoussis, in our majority, stand in defiance to the dull and lifeless coveys desaturating the kaleidoscopic social fabric of Syria not through confrontation but rather by clinging to our traditional Mediterranean way of life. We still master the art of taking it easy and the rest certainement à la tizi.

That night, I asked the prettiest girl in the party to dance with me to what is perhaps one of the greatest love songs ever, When I Need You by Leo Sayer. The song went on that year to top the charts on both sides of the Atlantic (the UK Singles Chart and the US Billboard Hot 100).

Last night, thirty two years after that dance, a breeze blew from the west cooling down the lingering heat of the day. There were folks walking by, young lovers holding hands and this tartoussi  riding his bicycle on the corniche late in the evening. I was enjoying the silence and engrossed in my private thoughts when I decided to listen to some music. I picked a List I call “Soft” on my iPhone and drifted with the tantalizing flow of easy listening songs. The mood was ripe for a daydream (eveningdream is more like it) and right in the middle of it, When I Need You came along.

To lovers all over, this one for you. To the woman who's more me than myself... May I have this dance my Princess?

Jijeh Mehshieh (Stuffed Chicken a la Tortosa)

This post is dedicated to Katia (I promise you a more romantic one, loool)

I have settled adequately into my Ramadan routine. It's really simple come to think of it, minimum talk and/or contact with the rest of the human race, that's all I ask for. At work, I hate talking on the phone or having to hear office chitchat. You know I'd rather be left alone. I don't like smiling or being agreeable. Well I pretty much hate everything in the morning. Later on in the day, I can close the door, be by myself and relieve the rest of the world of my grumpiness. You got the idea didn't you? I'm not much fun in Ramadan so just …. The phone rang for the hundredth time. Ohhh, I'm really mad now...



"HELLO."
It was my son, “Hi dad, I have a good recipe for your blog.”
“What is it Fares?” I asked, restraining myself from being too opprobrious.
He loitered with his words, “Mum is stuffing a chicken and I'm helping out. Do you want me to take pictures?”
"Sure why not,” I wanted to hang up, “is that all?” My mouth gaped in a rictus of annoyance and dudgeon.
“No there's Fatteh too”, he said unnecessarily.
I was on the brink of desperation, “no I meant do you want something else before we hang up.”
“Ahhh not really, although it would be nice seeing that big smirk on your face now. Bye dad!!!” He hung up.



Oh damn it, I really didn't want to smile. It's so out of my character at this hour of the day in Ramadan. But here it is anyway, Jijeh Mehshieh (Stuffed Chicken a la Tortosa), all photos taken by Fares.



Ingredients:
1 whole naked chicken
200g ground beef
1 cup long grain rice
1 onion
2 garlic cloves
1 tablespoon vegetable oil
1 teaspoon salt (or per taste)
2 cinnamon sticks
½ teaspoon black pepper
½ mixed spices (whatever)
½ cinnamon powder
½ oregano
2 laurel leaves



Preparation:
-Heat oil in pot and stir the ground beef until golden brown then add the rice. Continue stirring for a minute or two before adding 1 cup of water. Cook rice covered over low heat. Remove when almost done.
-Rub the chicken inside out with the salt, herbs and spices and stick the cut garlic in there. It's easy to get kinky with chicken so watch what you're doing and respect the dead please.



-Stuff her with meat/rice making sure not to over pack.
-Stitch the ungodly hole with needle and thread then place into a large pot and add water to cover ¾ of the body. It's a good time to throw in the onion, cinnamon sticks and the laurel leaves. Bring to boil and keep on medium heat for 30 minutes.



-Remove then place in a pan with 2 cups of the broth. Wrap completely (chicken and pan) with aluminum foil and shove it in the oven for 45 minutes (175ºC). Remove foil and leave in oven for another 15 minutes to give the chicken a lovely suntan (or oventan, hahaha: wicked laugh).
-What remains of the broth could be used as sauce or converted into chicken soup (it's very good by the way).
-Present with more cooked rice (in this case the additional rice was prepared with some saffron to give it the golden yellowish hue).
-Enjoy the Jijeh (chicken) at its best.

Jijeh is Tartoussi for Jahjeh (Damascus), Djedjeh (Aleppo), Dajaja (the rest of the Arab world with the exception of Egypt where it's called Ferkha).

Shakrieh

It is customary in Syria to have a white main dish on the first Iftar table of Ramadan. This might be true of other neighboring countries but I cannot claim what I do not know. White for many cultures is considered as a good and auspicious color and as thus has no religious significance whatsoever. Of course in Levantine Cuisine a white meal could only mean that a dish is prepared and cooked in Yogurt Sauce. As far back as I can remember we always had Shakrieh on Ramadan 1st. It' is one of my all-time favorite dishes especially since I'm biased anyway to anything cooked in yogurt. Shakrieh is a year round Syrian recipe and is not unique to Ramadan.



Here it is, in very simple steps, Shakrieh in its most basic form, the Tartoussi way.

Ingredients:

1 kg lamb chunks (Mozat)
3 large onions cut in rings
6 to 8 cups plain yogurt
1 tablespoon cornstarch
1 egg
1 teaspoon Salt
2 sticks Cinnamon
1 tablespoon Vegetable oil
Water

1 cup of Rice or Burghul (cooked the usual way on the side)




Preparation:

-Heat the salted lamb chunks and onion rings in a large frying pan with the oil. Stir well with a wooden spatula for 5 minutes.

-Bring 4 cups of water in a pot to a boil. Add the lamb chunks, onion rings and cinnamon sticks. Cook over medium-high for one hour. Save the broth.

-Separately bring 6 to 8 cups of plain yogurt, cornstarch and raw egg to boil over medium-high making sure to stir slowly but constantly (non-stop otherwise the sauce is ruined) until it starts boiling. Reduce heat to low and add the lamb chunks and the tender onions plus one cup of the broth to the yogurt. Cook uncovered for 10 minutes.




-Cook the rice (or burghul) with 1 cup of broth (or more) as usual.

-The Shakrieh and the rice (or burghul) are served side by side in individual plates but presented separately on the table.

Simply delicious!

August

August wears me down. It always had. It always will. This year I have been dreading the month long before it knocked on my door.

It's not often that I'm home alone. But in a time when everybody needs a little vacation I had no option but to stay behind. Kids, more so than the rest of us, must grow up loving August. There would come the day eventually when the burdens of life will make them change their minds. The telephone cried in the quiet room.

-Heard you're alone!
-I am.
-What do you say we share a drink and be alone together...

I picked a shirt in the dark, slipped into a pair of jeans then drove toward the sea. I rolled the windows down and opened the sunroof. No air was coming in. Tartous closed on me as the whole world was too tight around the neck. There was a long line of parked cars on the boulevard as I brought mine into an empty spot. What were they thinking about, these ungodly machines? I stepped down, pushing a button on the key chain and crossed the street pweep, pweep into heavy silence.

Underneath the 900 years old vaulted ceiling men and women sat behind tables. Oblivious to being, they stared at walls, imaginary and real. What makes us believe we're that different from the cars parked outside? Waiting, isn't that what we're all doing?

In desperation we draw the last card, the company of others. We hugged, tapped shoulders then slumped into padded chairs, men tired of the long summer.

Ah my Beloved, fill the Cup that clears

The bleak day turned brighter with the flow of the amber Scotch. My heart sighed while the welcomed numbness took over. My thirsty soul gasped with glee. Talk followed echoing through the valleys of the minds. I fancied a Scottish fairy tiptoeing toward me. She came to a stop and knelt by my side, took my hand in hers, kissed the tip of my fingers then brought the back of my hand to her cheek and whispered in my ear, you'll be alright my...

The chagrined notes of a solitary Oud drifted in the air then a sweet voice rose from the dungeons of a tormented soul. My fairy smiled down at me, repressing a solitary tear at the corner of each eye. She ruffled my short hair then vanished in thin air.

Sea Side

Ah, Abu Fares, truth be told, I have not been your way in a very long time. With this piece I was pulling on memories of the distant past as well as some accounts from friends. I would be so happy to travel there one of these days and I would definitely let you know if I was going to be there. I needed a little vacation…so I took one in my mind to one of the prettiest areas of Syria.
Is it going to be another G&A? Well, Abu Fares, I have a proposal for you. How would you like to collaborate on a fictional tale that reflects life in the area – continuing from where I left off? I don’t know of anyone better to write about this beautiful part of the country. It might be kind of exciting to see what we can come up with. What do you say? I would hate to be presumptuous, but I think our readers might enjoy it.

Mariyah (responding to my comment on her post Sea Side)



Over a period of eight months, from October 2008 till June 2009, Mariyah mixed fiction with fact and romance with resilience to create faultless white, bronze, gold and black pearls and wore them in a string around her supple neck. She then sprayed the exquisite beads with the perfume of her boundless imagination and conjured the most endearing fairy-tale on the Syrian Blogsphere, The Story of Ghassan & Alexandra.

Anyone who knows me well enough surely realizes that I'm not the romantic type, or so I would like to believe. But as my hair becomes whiter and thinner, my mind and soul get younger and greener. When I read Mariyah's first chapter of her new work Sea Side and after she invited me to co-write it with her I can't but express my absolute delight and elation. I am honored dearest Mariyah and I look forward an entertaining and sweeping flow of a spontaneous plot. As we follow our uncharted storyline we will be startling each other even before we surprise our readers.

Sea Side will appear in alternating episodes written by Mariyah and Abufares on Mariyah's Blog. She has already started the journey with a breathtaking introduction which had captivated me at least and made my heart leap with joy at her offer. I invite you all to join us there for an undetermined stretch of time. Ahhhh, the never ending stories by the sea… by Mariyah's side.

Suffonsified

My mobile's alarm blasted at two o'clock piercing the still of night and robbing precious sleep from my weary eyes. Bewildered, I slowly lifted my upper body on an elbow. I had gone to bed well past midnight but suddenly I remembered that I had a car to ride, two airplanes to board and a taxi to drop me at a hotel in Martigues. Eighteen hours later, I leaned on the reception counter of a small hotel in the south of France.
Oui demoiselle, je veux rester pour quatre nuits chez vous.

The summer sun lingers in the sky of France well past its usual day-shift of lower latitudes. My biological clock completely out of sync, my laptop rendered useless after a fatal system crash on the flight from Damascus to Paris and loneliness creeping up on me I descended the hill on foot and headed toward the docks of the small town by the sea.



I scrounged frantically for a discarded cigarette butt on the pavement and sidewalks. No city could be so clean, no place more serene. Seagulls flew overhead sending shrieks echoing against the brilliantly colored walls of quaint houses. A loose sail fluttered in the wind while a couple of hands worked feverishly to quite it down. I could taste the salt on my lips, I could taste hers in my reverie. Moored boats wobbled on the troubled surface of the canal, straining against the ropes. The creaking of wood longing to sail was too painful to hear, too realistically disturbing.
-Where would you go old sport, I asked the heaving and battered launch, if you had the choice?
-Anywhere, it pleaded silently in my head, just set me free and let me drift.




Restless, sleepless and mindless I brought back Prufrock, my PC and travel companion to life. The night died in my arms. Its last memory was of my ecstatic eyes beaming out of my tired face. Connected at last, I was craving to read.

Fares, my pride and joy, the reason I am called Abufares after all had started posting in Arabic on his blog “Superkid Chronicles”. How can I ever convey my feeling of elation about the fact that he's writing. My nine years old son, Abumaher, is perhaps the youngest on the Syrian Blogsphere today. He had only posted twice so far and I've already commented with words that betrayed my fatherly bias. Still, I needed to take a look at his virtual space again and feast my mind on adulation and hope. I am in love with people who write. I always was. And Fares, my flesh and blood, is writing.

The neat office where I was to work for the next three days was thrown on the shoulder of a mountain. It stood sentry to the estuary which led to a lake somewhere further east. I met people who became my friends, for life. We shared bread, butter and plenty of wine. The sound of our laughter drifted in the breeze toward the piers. We exchanged toasts and stories of our cities by the sea, always by the sea. For it had brought us together, seamen who would rot and die in the dry blandness of the inland. What is a woman if her hair is not weaved with seaweed, if her armpits do not taste of the salt that keeps us old mariners afloat? What of her thighs if they don't froth with zest to the tiding of my call? Her piquant breasts a safe harbor for my head where I close my eyes and still can see.



Mariyah's 26-episode story of Ghassan & Alexandra burned my second night and handed me safely to the morning sun. I would really like to find a way to tell you and myself how much I like Mariyah. Since she dropped anchor on Syplanet she had become my fantasy ship. When I sit on the outstretched rocky wharf of the corniche in Tartous her writing washes over my head and shoulders, cleansing my heart and soul. I gaze at the curved horizon and wonder about the straights she's crossing. Be tender on her Oh Goddess of the Sea and bring her smooth passage until she takes shelter while the storm withers away. Dawn crawled from beyond the hills, invading the dim corners of my room. Finally, I dosed for minutes dreaming of the intoxicating scent of Mariyah's prose.



On a concealed terrace not far from the marina half a dozen tables were laid in the shade of a giant Eucalyptus tree. I had my lunch there day after day. My hosts, perfect gentlemen, treated me like the indubitable ambassador I was to their tranquil shores. I never sampled a more toothsome cuts of entrecôte or a more divine côtelettes d'agneau in my whole life. Ah, les Français, I forgive their snobbish repute though I have only basked in their unrivaled hospitality and generosity. The twin bottles of Rosé kept us company and lulled our senses, reinforcing the simple verity that we were one family across the Mediterranean. The clinking of flushed goblets reverberated among the patrons. Salut mes amis, à votre santé.

Gabriela writes from Lima, 8000 miles away. Ever since she graced my blog with her first comment I took an immediate liking to her. I know that I will meet this intelligent, spirited and beautiful lady one day. I have no doubt. She will either come to see me in Tartous and I will walk with her through the narrow alleys of the old city or she will guide me in the Barranco district of her enchanting city. Gabriela writes inimitably in Spanish, a language I have always loved and vaguely understood. I translate her post on Google first and swallow the shabby English just for the sake of getting the general meaning behind her words. Then, I slowly sip her Latin spirit and get dizzy on her dainty melody and rhythm. Seis de enero is the blog of my lovely Peruvian Lawyer. I can't wait to be in Lima, to get in trouble then have Gabriela bail me out. She stayed with me on my third night and didn't leave until she got her message across. You can't spend your whole life traveling without going where you always wanted to. South America is a dream on hold, Gabriela reminded me.

Whenever I walked the streets of Beirut a personal unsolved mystery followed in my footsteps. Who was she and where did she come from? Evidence of her oriental paternal pedigree was abundant as traces of Islamic arcs, Arabian nights and Byzantine bells could be discerned on her slender body. Yet her mother remained behind a veil until I landed in Marseille. Ahhh, the full realization, the overwhelming sense of Déjà Vu . No wonder so many Lebanese call France their mom. Just take my word for it dear neighbors, it was never France, it was Marseille only and all along. We sat in that most famous of restaurants on the beach of the city. We were late for the topless volleyball chicks, my hosts apologized. This is where the fabled bouillabaisse de Marseille is prepared. My friends and I surrendered to the maitre who promised to take good care of us. He brought forward a glass of Pastis for me when he learned about my fondness of Arak. Then in the spirit of White we drank some of the best wine the south of France had to offer. Growing up by the sea and being raised on its scrumptious fruits all of my life I finally had to take my hat off, Chapeau bas a Marseille. A fish, if given the choice, will ask to be eaten in a bouillabaisse in Marseille after it dies and goes to heaven.



I gingerly climbed the stairs to my room on my last night in Martigues, satisfied beyond explanation, absolutely, perfectly, completely suffonsified. Only Isobel can do justice to the fleeting hours of bliss before I pack again and move. Suffonsifism has been my best kept little secret for quite some time. The apparent simplicity and effortlessness this gorgeous woman puts into her writing is mind boggling. Her posts are often short and to the point. How can she, I wonder, say it the way she does. How can she be so suffonsified and make me, a man behind a small screen halfway across the world, come to grasp the full meaning of her blog's name? I have never read anyone like Isobel. I very much doubt that I will ever read anything remotely parallel. I tiptoed through her lines, paused at her comas and came to full stop at her periods. Her divine music rushed through my mind, her priceless humanity escorted me through the blind twists and turns of a long tunnel where there was light at the end. I stood there in awe, not daring to blink for fear of missing a minute detail of her beauty within me, not believing that I went on for four nights sleepless in Martigues, forever suffonsified, and ever!

Kamikaze



It was the end of June, a hot and humid morning on the southern Dream Beach¹ of Tartous. I slept alone and rather erratically, having watched Argentina beat West Germany 3-2 in the FIFA World Cup Final the night before. A bunch of friends and I had consumed plenty of beer and whatever leftover bottles we could find in the secluded chalet. I had a terrific hangover and couldn't tolerate even the smell of coffee. Instead, I gazed at the endless expanse of blue from the western terrace then walked lazily on the warming sand. Only if someone could stop the goddamn spinning, I wished. I threw myself in the tantalizingly refreshing water and surrendered to the sensual fingers of the undulating waves. The salty breeze and the engulfing wetness brought me back slowly and without coercion to awareness. My muscles relaxed. The pounding in my temple eased off. What a glorious day ahead, I mused.

I had nothing to do or worry about. My immediate concern was to secure some basic form of breakfast. There were eggs in the fridge, Labneh, olives, tomatoes and cucumbers. After filling my stomach with solid food I could return with a book, a beach umbrella and a towel to my favorite spot where the soft breakers came to rest at my feet. I needed a pair of slippers, I thought, for the round trip to the chalet. The sand would be getting hotter and hotter by the minute as the sun rose unblinkingly higher and higher. I would read for an hour or two then go back to the chalet. In some kitchen cabinet there were at least a dozen cans of various types of junk food and olive oil. I saw a knot of bread² and potatoes over the counter. I will throw in something with the potatoes and have lunch straight from the skillet. The plates were piled high in the sink, unwashed. Sure, the place was an absolute mess and in dire need of cleaning but it wasn't something I was willing to lose my precious time over. I would clean a knife and fork, yeah, that I would need. The telephone line was out, oh thank goodness for that. There will be no interruptions. No calls from anyone to join me or for me to join them. For the afternoon, I schemed, suspended on my back like a dead porpoise heaving up and down on the surface of the sea, I could fill the icebox with cold beer and fasten it to the inflated inner tube of a car tire. I would then tie the tube to the folding chair placed knee-deep in the water. I would aptly sit and the chair would sink down evenly until it settles firmly so that the water is at the perfect nipple level. Ahhh, I'm so smart, so efficient at minimal work, I'm a damn genius, I beamed with pride and delight. Two, three beers down my belly, I would contemplate the meaning of life and probably nap. I would need a baseball cap and my sunglasses to minimize the glare. Ooooh, what a glorious day indeed.

I ran back invigorated. It was time to execute this perfect plan of mine. My eyes caught the reflection of the sun in the mirror of the parked Yamaha. My brand new cherry colored 135RX beckoned at me: Come ride me you hunk of a male, she whispered. With less than a 100Km on the odometer, I couldn't resist the seduction. Should I have breakfast first, I wondered. I didn't think so. I couldn't keep her waiting much longer and I was getting very excited myself. Ok baby, your man is coming, I smiled at her like Clark Gable. I was wearing only my wet shorts, absolutely nothing else. They weren't even swimming trunks, just plain blue, cotton, sexy and very short shorts.

She purred at my first kick-start. She was too hot and bothered to be warmed. Take me for a spin darling, she begged, give it all to me. I smiled again, more idiotically this time, a little like Tom Cruise perhaps. The road down the Dream Beach strand of chalets was as close to a ¼ mile drag race stretch as we could ever have in Tartous. It was much longer and narrower though and offered plenty of opportunity to go wild on two wheels. There were only me, a horny motorcycle and hot asphalt as far as the eye could see.

I fore-played the petite Yamaha and watched her RPMs going up and down the green range of the dial. Her purring changed into whining then screeching moans of ecstasy. Oh damn you take me hard, take me all the way, red-line me now, now, now....... she screamed. I gave it all to her and her needles rose into an insane frenzy of speed, 120, 140, 156, 57, 58, 59, aaaaaaahhhh 160 km/hr, OMG, yeS, yES, YESSSSS. My tears flowed, hair pulled back, lips twitching, my nipples tormented with the rushing onslaught of pinpricks... and, and... up ahead in the distance, 50 meters or so, straight forward, a tiny dot was approaching from the opposite direction at an unbelievable pace. I could see it getting bigger and bigger while at the same time I was realizing fully that I could never take any evasive maneuver anymore. I remember that split of a second as if it was shot with an extremely slow motion camera. How could I forget.

I mentally surrendered to the fateful impact. A nanosecond before we collided, the maniacal Kamikaze took a vicious dive to maximize the damage. My recognition of the identity of my assailant and his death happened at the exact same instance. He was hideous, evil and yellow, an Asian giant hornet who flew all the way from Japan to avenge his honor. Evidently it was too much for him to digest the sight of a Japanese bike and a Tartoussi guy going wild with each other on a beach road. Goggled, bandana-ed and scarfed, he flew his last mission for the glory of Japan. He extended his 6 mm stinger, released his lethal cytolytic peptide venom as he was squashed into oblivion against the soft tissue of my balls.

The blow was so powerful I felt as if I were kicked in the crotch by a heavyset and ugly Russian soldier from one of the Bond's movies. I released the throttle instantaneously. I had to crawl on all four, take the fetal position and die somewhere on the shoulder of the road. The Yamaha finally came to a complete stop. I laid her on her side and AAAAAAAAAAAAAAYYYYYYYYYYYYYY I screamed, a demented soul rolling and turning in the dirt like a butchered animal. My first thought was how far the chalet was. A couple of hundred meters, I guessed, in heart wrenching agony. After what seemed to be an eternity, probably five minutes in real time, I summed what was left of my strength and limped back in the saddle of my bike to my hole in the ground. I stepped in the chalet, closed the door behind me, pulled down the shutters and shades, collapsed on the floor and lost consciousness in the darkened room.

The poison flowed in my bloodstream and my temperature rose dangerously high. I swam in a pool of sweat as my whole body was taken by a fit of shivering. Paralysis spread from my loins down through my legs and up toward my chest. I dosed on and off and suspected seeing the grim reaper at the edge of my vision. A long spell of hallucination followed leaving me clueless as to the passage of time. It was pitch black outside when I leaned on my elbow, crawled to the sofa and managed to switch the light on. I was swollen, all of me. An allergic reaction to a massive dose of venom left me like a useless lump. I could hardly breathe as I looked in dismay at my swollen shorts. The lump was the size of a softball and if you're not familiar with softball, suffice it to say that it's at least twice as large as a baseball and not by any means softer. My legs buckled underneath my weight and I lost my mind completely. Nightmares and delusions shone, flickered then dimmed like ignes fatui as the night and half of the following day consumed themselves. A little before sunset on the next day I was still in the exact same spot on the floor but my eyes regained focus and the fog in my mind began to dissipate. I removed the remnants of the martyr and his stinger off my left ball. He had a wicked grin on his face the sonofabitch. I was still pretty swollen and multicolored like an old Bollywood movie when I took off my shorts but I knew that the worst had come to pass.

A little before midnight, after a cold shower and a gallon of water to drink I sat quietly in the night enjoying the quivering image of the moon on the gentle surface of the sea. The air was moist and pregnant with untold secrets and I could hear the echoes of laughter in the distance. My temperature and heartbeats were gyrating closer and closer to normalcy. I was still weak and shaky but feeling much better. Will I ever be the same, I wondered. Twenty three years later and I still don't have an answer.

Stuffed Zucchini in Yogurt Sauce – Kousa b Laban

Well it all started innocuously enough, I stated that I'm hungry then I went further, I'm still hungry, I pleaded. I don't quite know what else to do on Facebook except change my status. I access it through a software, a proxy fucker of some sort, and the whole experience isn't that enjoyable to tell you the truth. If it were not for you, some of the people I care most about, I wouldn't even bother go there.

The immediate comments on both statuses were very confusing to me. After all I am a provincial man with a simple mind. I needed something to pacify my hunger that's all. Kousa (Zucchini) I reckoned is the perfect answer to my commentators. This a recipe that is simply delectable. Yet more significantly, it is very sexy to prepare as it involves... well never mind...
It might not be as naughty as asparagus, wink wink, but from a certain perspective, Kousa is very erotic. Even the name, Ah! Even the name... LOL

So here we go, let me feed you right.

Below quantities for 4 to 5 People.

1 kg small sized zucchini (15 cm and less)

2 tablespoon olive oil
1 large onion finely chopped
300 g minced lamb meat (low fat) or ground beef
2 cubes chicken broth (optional)
2 crushed gloves of garlic
1 teaspoon salt (or more)
¾ teaspoon black pepper
1 teaspoon Cinnamon
1 tablespoon pine nuts (optional)
1 cup short grain rice

4 cups low fat yogurt
1 egg
1 ½ tablespoon cornstarch

1 teaspoon dry mint

-The zucchini pulp is scooped using a special utensil (found in Middle Eastern Food stores) or the handle of a tablespoon. First cut both ends of zucchini (slightly).
If you've never done this before, place the scooper next to the zucchini and estimate the full length – 2 cm to avoid opening a hole in the closed end of the zucchini. Slowly turn (using your wrist) the scooper in 90 degrees counter rotating moves while removing the scooped pulp gradually (this is the only tough part about the whole thing).
-Wash with water and let dry. You can use the pulp for another side dish so you don't have to throw away, but I really don't feel like writing about it today.

-Over medium heat in a large pot heat olive oil, add chopped onion stir for 5 minutes then add minced lamb, garlic, black pepper, Cinnamon and pine nuts. Continue stirring for another 5 minutes then add washed and rinsed rice and chicken broth and stir for 1 final minute then turn off heat, remove and place in a bowl.
-Let cool at room temperature.

-Stuff the zucchini with (above) using your fingers (ummm naughty, naughty) until ¾ full and slightly pressed.



-Add cornstarch and the egg to Yogurt in large pot and stir constantly with a wooden spoon over medium (don't stop at all – if you do the yogurt sauce will break apart and becomes useless) until boiling. Immediately reduce heat to medium/low then stop stirring (now you are safe). Add the stuffed zucchini to the yogurt and cook for 60 minutes (uncovered).
-Remove, sprinkle with dry mint and serve.

Bon Appétit however you decide to assuage your hunger.

Syria is...

I received an invitation from Creative Syria, one of the more interesting Syrian sites on the internet, to participate in writing a personal assay about the land of my birth. I am honored of course that my article was published along with 7 excellent mind and heart inspiring pieces of the highest caliber written by acclaimed and accomplished Syrians from around the globe.

The Cave



Toward the end of October 1096, the Count of Toulouse, Raymond de Saint Gilles (1041– 1105) left his native land never to return. Driven by religious zealotry and material aspirations, Saint Gilles, by far the oldest and richest Crusader, dreamed of dying in the Holy Land. On his way to fulfilling his failed destiny in 1101, he took control of Tortosa, a little burg by the sea. Known today as Tartous, Tortosa offered safe harbor as an entrepôt for military provisions and was ideally close to Cyprus and Antioch. Before the old Count died he managed to transform it into a magnificent military bastion which eventually became one of the most interesting old Mediterranean cities for researchers and historians.



Nine hundred years later, the remains of the Crusader era still form the core of the historic center of Tartous. They have survived centuries of earthquakes, hostilities, neglect and negligence. The splendid cathedral of Our Lady of Tortosa (1123) endured the ravages and the elements of time almost intact. A banqueting hall, originally known as La Salle Des Chevaliers, has lost most of its arched ceiling and houses within its walls scrounging and contiguous abodes. A nearly roofless chapel with a stone lock carrying the sign of the Rose, a testimony to the Knights Templar who dwelled and worshiped within the high walls of Tortosa, has all but succumbed to vandalism and defacement. And to the West, facing and defying the incalculable number of waves thumping incessantly against their sloped outer walls, lay the dungeons, where offending natives were imprisoned, tortured and eventually executed.



The Old City is located at the very beginning of the Corniche, a 2.5 km wide boulevard by the sea ending at the Ghamka River to the south. Most of Tartous’ restaurants and cafes are sprawled along the way and they vary from the mediocre to the admissible. Yet there is one so unique that it transcends all other restaurants in Syria and is possibly among the most distinctive anywhere in the world. It’s called The Cave and it occupies the northernmost dungeon.



The Cave is an unobtrusively restored 900 year old dungeon turned restaurant by none other than my best friend. He did not start the business. In fact, The Cave is one of the oldest restaurants/bars in town but last year he took over and embarked on his ambitious restoration dream. No expenses were spared and the painstaking work was brought down to a halt time and again by City officials and the pen pushers of the Antiquity Department. The Antiquity Law in Syria is even more archaic than the ruins it protects. In the wrong hands of bureaucrats any legislation can bring an entire country to a standstill. My friend persisted stubbornly and was finally awarded with the realization of his vision: a high-end joint in Tartous serving the best sea food and a la carte entrées this side of the Mediterranean. The ambiance is inimitable, the attention to details impeccable, the food delectable, the drinks ambrosial.



Next time in town and looking for a delightful gastronomical experience give The Cave a try. You can of course tell them Abufares sent you. Knowing my friend, don’t expect any discount but you will sure be treated like a Count.

Fijleet: Kingdom of Heaven

After a full week of wind and rain, Friday morning broke out clear and warm at last. The thermometer on the balcony by the kitchen showed 19ºC. The sky was pristine, with plumes of rare clouds splashed sparingly around its turquoise canvas. I didn’t want to miss this singular February opportunity and I hurriedly showered but did not shave. I put on a fresh pair of jeans, a comfortable sweatshirt and an old familiar baseball cap. Within minutes I was looking at the cityscape through my rearview mirror.

was still asleep on this brilliant day. I was heading due east on the quaint road to Dreikish. I swiftly eyeballed the rudimentary map and estimated the distance to my final destination at 45, 46 km perhaps, significantly less than the 65 km indicated on one of the websites I’ve earlier browsed.

When I finally got a chance to watch Kingdom of Heaven by Ridley Scott on DVD and in addition to enjoying this historically accurate movie tremendously, I became fascinated with the actor who played Salah El-Din, our own Tartoussi, Ghassan Massoud. I only knew by chance that he was born and that he grew up in a small village by the name of Fijleet. Among my springtime motorcycle jaunts I must’ve ridden through Fijleet at least once in the past but I couldn’t quite remember when. Reading the affectionate words Ghassan used to describe his village made me itch to go there.

Upon reaching Dreikish (elev. 500 m) and near the first intersection in town I stopped and asked a bystander for instructions. “You should go to the left there”, he pointed, “I’m going to Jnaynet Reslan and it’s on the way to Fijleet. I can ride along with you and show you the way if you don’t mind.” Of course I didn’t. The man was young, in his mid twenties perhaps. He taught at the local elementary school and thought that he would most certainly die if he ever left this country and moved anywhere else. “On Fridays, I trek these hills between the olive trees. I walked to Dreikish early this morning, bought a few things and was waiting for a microbus to get back to the Jnaynet until you showed up”, he confessed. “But tell me. Whom do you want to see in Fijleet?”, he asked.

I told him that I was driving by and taking pictures and didn’t know anyone from around this area. He volunteered to take my picture with some beautiful scenery in the background and I gladly accepted. Once we reached his village he offered his natural hospitality and begged me to have lunch with him and his mother. I apologized reluctantly although I would’ve loved to take him up on his offer. When I left home earlier everyone was still in bed. I wanted to return on time to have a light lunch then go to the football game at the municipal stadium with Fares. Our local team Al-Sahel (The Coast) was playing at home against Ariha. They are doing very well in the 2nd division and might, just might, make it to the top level next season. Samir finally accepted my excuse as I promised to visit him on my next trip to his village.

The road ahead climbed and winded, knifing the endless hills with love and care. Off in the distance to the south the Lebanese Cedar Mountains shaped the jagged horizon. Up in front evergreen summits loomed closer and closer until I finally reached Fijleet (estimated elev 750 m). I parked my car by the side of the road and descended to see, smell, hear, touch, feel and breathe her timeless and regnant beauty.

I cruised slowly through the narrow roads of the village, shot a few photos and basked in the sunshine. I contemplated the connection between Fijleet and Hollywood. Ghassan Massoud rose to stardom and international fame through his roles in Kingdom of Heaven (2005) and Pirates of the Caribbean: At World’s End (2007). He gained my respect and admiration for the heartfelt words of reverence and affection he bestowed on his native land.

There’s no adobe like home wherever that might be. It is indeed a state of mind to call a place home and some of us might be fortunate enough to have more than one. As long as there’s a locus for us where we can walk in the pitch black of darkness and not stumble, we’re going to be fine. We can do that in our own backyard or somewhere, in the company of someone, whom we can fully trust to take our hand and show us the way.

Driving Instructions: From Tartous take the road to Dreikish, 30 km. Once in Dreikish and at the first roundabout, go left (North) then continue to Jnaynet Reslan 10 km ahead. Maintain the main road for 6 km to Fijleet. There are signs in Arabic along the way and you can always ask.
