Orzo Spinach Soup
1 diced white onion
3 diced cloves of garlic
1 tablespoon soy sauce
1 teaspoon brown sugar
2 tablespoons olive oil
1 1/2 cup Arzo pasta
1 cup diced celery
I cup diced carrots
2 cups roasted diced tomato
1 tablespoon butter
3 cups diced spinach
6 cups Water + 2 chicken broth cubes
Oregano, rosemary, thyme, a pinch of each
Salt and pepper to taste
Heat oil in a pan, add onions garlic and soy sauce, stir for 4 minutes until gold in color and sprinkle with brown sugar (optional but I love the caramelized hint of sugar).
Add diced celery and carrots, stir for 4 minutes.
Add water, chicken stock, tomatoes, butter, oregano, rosemary, thyme, salt, and pepper. Cover and bring to boil over medium high heat, stirring occasionally.
Reduce heat, uncover, add the orzo pasta and simmer while stirring lightly but continuously for 10 minutes, add spinach for an additional 2 minutes.
Ready to serve. Enjoy it! (Serves 6)

Abufares, I think this is a twist on the recipe from Pinterest. :) I also made it this evening. I changed it up a bit too because I didn't have spinach or celery. So I used red Swiss Chard instead. I also used a lot less orzo (mainly because I didn't have as much as the recipe called for) and I think my dish wasn't as thick as yours. Anyway, yours looks delicious and mine smells very tasty. I'll let you know the outcome after I get to eat it.
As Isobel suggested, you can replace the orzo pasta with long grained rice I suppose.
It's more or less a vegetable soup with the anchoring effect of pasta which turns it into a fulfilling and yummy dish.

I was pleasantly surprised when the kids asked me to prepare it again today. I made it thinner, just like you. I liked it both ways.
I'm sure yours turned delicious. We both like to improvise, and yes, I did modify the original recipe. I almost always do :-)

There aren't so many ads on my blog. There are 3 to be precise and they are part of my adsense deal with Blogger/Google. Theoretically, yes, I should be making money.
